Dosa Pizza / Gluten free Vegan

Dosa Pizza is a variation of Dosa. It is gluten free and uses vegan cheese. Healthy and easy to make Dosa pizza.

Dosa Pizza

Ingredients:
½ cup onion chopped
½ cup tomatoes chopped
1 cup mixed vegetables of your choice
(I added broccoli, zucchini, red and yellow bell peppers that were left after making risotto)
2 tsp Pizza seasoning (mixed dry herbs)
1 tsp chilli flakes
1 tsp olive oil (any oil of your choice)
Salt to taste
4 tablespoon Vegan cheese grated
Pre-made Dosa atta

In a pan, add oil, sauté the onions till translucent, add the tomatoes and sauté for few more minutes.  Add all the vegetables and seasonings and sauté for few more minutes. Vegetables should remain crunchy. Add 4 tablespoon cheese and mix well.

In a heavy bottomed skillet / tawa, make a thick dosa (as uthappam) on slow fire. Dosa should be soft and fluffy. Once the down side is cooked, turn it. Spread the vegetables on the cooked side. Grate more cheese for decoration. Cover the pan and cook for few more minutes. This cheese does not melt. Eat Dosa Pizza when it is hot.

Serve hot

As a variation, this Pizza can be done with leftover Millet rotis as well. Spread the vegetables on the roti, grate more cheese and microwave for 1 or 2 mts. If you don’t have leftover rotis, you can make fresh rotis, cook them lightly on a tawa and proceed as above. As this cheese does not melt, no need to bake it in oven.
