Groundnut Bajra Paratha

Parathas are all time favourites for all. They are so versatile that you can have them for breakfast or main course or as a snack. Groundnut Bajra Paratha is no exception. Delicious Paratha that is Dairy free & Gluten free.

Groundnut Bajra Paratha is a healthy paratha as well with added proteins in the form of groundnuts.

Groundnut Bajra Paratha

Ingredients:
½ cup raw Groundnut (soaked in hot water with sea salt for 15 to 30 minutes)
1 tablespoon curd (I used my groundnut curd) *
2 green chillies
1” piece ginger
¼ cup water
¾ cup Bajra flour (or any millet flour)
1 teaspoon chilli / paprika powder
2 teaspoons coriander seeds powder
1 teaspoon cumin seeds powder
1 tablespoon sesame seeds (til)
1 teaspoon carom seeds (ajwain / omam)
1 tablespoon crushed kasuri Methi leaves
2 tablespoons chopped coriander leaves
1 teaspoon turmeric powder
1 teaspoon jaggery powder
Salt to taste
1 tsp oil

  • Mix all masalas from chilli powder to salt with the bajra flour
  • Drain water from raw groundnuts, wash it few times and grind in a mixer adding vegan curd, green chillies, ginger and ¼ cup water to a fine paste
  • Add the paste to the flour mix and knead to a soft dough.
  • The consistency of the dough depends on the nature of the flour. Adjust by adding more flour if it is loose / more water if it is too thick.
  • Make small balls and roll into parathas
  • Cook on a medium flame till both sides brown
  • Smear ½ tsp oil on both sides (if required), remove and cool.

I didn’t use oil for cooking. They are soft and tasty.

Serve with curd

Makes 5 to 6 medium sized parathas. These parathas stay good even for 2 /3 days

*You can use normal curd if you are not vegan / non allergic to dairy

Note: This Paratha can be made with left over pulp after making Groundnut curd
