Lauki Pancake / Bottlegourd Pancake

Lauki, also known as Bottlegourd / Dudhi / Suraikkai, is one of the healthiest veggies. Here’s a healthy breakfast recipe Lauki Pancake that can be made quite fast and is best for morning rush hours.

It has around 92% water and a rich source of vitamin C. Unfortunately, it does not get as much recognition as it deserves. Many deem it as a bland vegetable due to its slightly bitter taste and relegate it to a corner. The only dish that is popular with lauki is Dudhi js Halwa. Here’s a healthy breakfast recipe Lauki Pancake is close cousin of potato Hash Brown.

Ingredients:

  • ½ cup grated Lauki (bottlegourd)
  • 3 tablespoon chick pea flour
  • ½ tsp chilli powder
  • ½ tsp coriander powder
  • ½ tsp sesame seeds
  • Chopped coriander handful
  • 2 green chillies and small piece ginger minced together finely
  • Salt to taste

Directions:

  • Add all ingredients and mix thoroughly into a thick paste. Do not add any water. Bottlegourd is watery vegetable.
  • Heat a skillet.
  • When the skillet is hot enough, reduce the flame.
  • Take big ball of the paste in your hands and pat it with your hands directly in the skillet to a pancake of 4” to 5” in diameter.
  • Smear 1 tsp oil around if you wish.
  • Wait till the bottom side becomes brown.
  • Flip and cook on the other side.

Serve with green chilli chatni or green chilli pickle.
