“Hey, you have already educated us on eliminating gluten and dairy. Now you want us to eliminate sugar too?” you may ask.
No. I’m not here to preach anything. All I want to say is that this site will not be using ‘Refined White Sugar’ for the simple reason that I personally believe that nutritional value of Refined sugar is just Zero. It has no vitamins, minerals, enzymes, protein or fibre. But has only Calories.
How does sugar get its sparkling white colour?
Incidentally, Maida (Refined wheat), Milk and White sugar are called the “Three Devils of Nutrition”. All sparkling white.
Refined sugar gets its shiny white colour by bleaching with lime phosphate & further by adding sulphur dioxide. The latter works as a bleaching agent and makes sure that the end product is milky white in colour. The problem with this process is that a little bit of sulphur remains within the final product.
What is the solution?
Some Western countries have banned this process involving sulphur and uses carbon di oxide instead. It does not bleach the sugar. The result is not white but brown. This brown sugar is predominant preference of many, though there is a mental block against it in India.
Do we say ‘no’ to sweets?
No. Not at all. Very few do not like sweets. As I said earlier, my personal fight is against refined white sugar. Hence all desserts in my recipes will be using organic jaggery powder / palm jaggery / jaggery syrup. The colour of end product may not be the same as with white sugar. If you have any mental block against this, you are free to substitute white sugar in its place in the recipes.
