These Puttu Podi Cookies are made with Chemba Puttu Podi. Chemba puttu podi is prepared from Red rice. Red rice is usually unhulled or partially hulled and so has high nutritional value.
Puttu is a famous dish in Kerala and Tamil Nadu regions of South India. The rice powder for Puttu is of coarse nature.
These Puttu Podi Cookies are easy to make. I have used coconut sugar. However, you can use cane sugar / brown sugar.
Chemba Puttu Podi 1 cup
Desiccated coconut ½ cup
Coconut sugar* ¼ cup
Baking powder 1 tsp
Flax seeds powder 3 tablespoon (soaked in 9 tablespoons lukewarm water)
Coconut oil 2 tablespoon
Vanilla essence 1 tsp
*You can substitute coconut sugar with brown sugar / jaggery powder / any sweetener of your choice
- Preheat the oven to 180˚C /350˚F
- Combine all the ingredients and make a soft dough. Add little more water if necessary.
- Make small balls
- Line parchment paper / silicon sheet in a baking tray, place the balls and press down to small cookies with hands / oiled bottom of any small cup.
- Prick with fork for even baking
- Press 1 Cashew on each cookie
- Bake in preheated oven for 20 to 25 minutes.
- They will be slightly soft when you remove initially. And become crisp after cooling down.
- Heat level differs from oven to oven. If you feel the cookies are still soggy after cooling, keep for another 3 to 5 mts in the oven.
You can add broken cashews / chocolate chips in the cookie dough. Adjust the sweetness according to your preference.
Goes very well with your evening tea / coffee. Good for your kids’ snack box. Healthy snack.
