Achari Alu Gobi / Baked Alu Gobi

When Alu Gobi is coated with pickle masala and baked in an oven you get Achari Alu Gobi. Perfect when you have sudden guests for lunch / dinner and when you have to make a quick sabzi.

What do you do when you empty your home made pickle jar and there is quite a bit of tasty masala left in that? Well. My mom used to mix cooked rice in the jar, wipe out all the masala with the rice and a mouth watering pickle rice was ready which she used to make into small balls to distribute. It was so delicious that we used to fight for those balls.

I was cleaning up the pickle jar. As a variation, instead of rice, I added some cauliflower florets and 6 baby potatoes, washed and cut into wedges with skin. Shook the jar well till all the masala got coated in the vegetables. Added in a baking tray and baked in a pre heated oven at 190˚ C for 15 minutes.

A very tasty Instant Achari alu gobi was ready. Cauliflower was lightly charred which added to the taste.

This can be made even when you do not have to empty your pickle jar.

Instruction:
Just add enough pickle masala in any vegetable of your choice, adjust the seasoning and salt and bake it at at 190˚ C for 15 minutes. It goes well in tiffin box too.
